Dried Yellow Oyster Mushrooms (Pleurotus citrinopileatus), also known as Golden Oyster Mushrooms, are an edible species native to eastern Russia, China, and Japan. They are closely related to the European Pleurotus cornucopiae. In North America, they have also been found growing on oak, elm, beech, and other hardwood trees.
Yellow oyster mushrooms are prized for their attractive golden color, delicate texture, and mild savory flavor. They can be rehydrated and used in soups, stir-fries, sauces, grain dishes, and a variety of other culinary applications.
