Chanterelle (cantharellus cibarius) are wild mushrooms. Chanterelle, like its cousin the Black trumpet has a buttery smell - reminiscent of buttered popcorn. It is widely used in Europe especially during the holidays. Typically, domestic mushrooms (North American) are bigger than those from Europe. Like all mushrooms, chanterelles are an excellent addition to a plant-based diet. Incorporating mushrooms into your plant-based meals not only diversifies your options but also provides essential nutrients and enhances the overall taste of your dishes. Mushrooms are also an environmentally friendly swap and they are generally less costly than meat. So, go ahead and enjoy a little fungi in all your meals!

A study published in Food Science and Nutrition indicated that chanterelles are abundant sources of carbohydrates, proteins, beta glucans, and dietary fiber. It contains functional polysaccharides such as b-glucan, proteins such as lectins and selenoproteins, fatty acits such as linoleic and omega-6, vitamins and minerals (N, P, K Ca, Zn, Ag, Se, and more). You may recognize many of these bioactive compounds in functional mushrooms such as lion's mane and Reishi.
