Dried Wood Ear Mushrooms (auricularia auricula). Cooked wood ear is a great filler for stuffing anything. It has a mild flavor and will absorb the the flavors the of foods around it. Use minced garlic, sesame oil and even oyster sauce for a flavorful dish. The shredded wood ear is a more convenient way to use this mushroom, but whether using whole or shredded, use wood ear as a healthy substitute for meat products.
